Recharge with Super Power Muffins

Whole Grains are an absolutely necessary part of a healthy day to day diet.  If you aren’t into eating plain wheat bread everyday, try these Super Power Muffins.  They are packed with protein, fruit, and whole grains.  Most importantly, it’s easy to grab a couple on the way out of the house for a quick power breakfast or snack, sparing you from a trip to the drive-through. 

These muffins freeze beautifully, so consider making a double batch and toss some in the freezer for next week.

Super Power Muffins

  • 1 cup whole wheat flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup Peanut butter
  • 2 bananas
  • 1 egg
  • Optional: 1/4 cup chocolate chips

Preheat oven to 350. In a medium bowl, mix all dry ingredients well and set aside.

In a large bowl, blend everything else then mix in dry ingredients. Coat a muffin tin with non-stick spray, and distribute batter evenly.

Bake for 15-18 minutes. Makes 12.
